El Salvador Dossokam – Chemex Recipe

Flavor Profile:

Coffee from El Salvador (especially the Dossokam variety) often features chocolate, caramel, and stone fruit notes (such as peach and prune), with gentle acidity and a clean body — Chemex brewing brings out this clarity beautifully.

Brew Ratio (for 2 cups / ~300 ml of coffee):

Coffee — 20 g

Water — 320 g (ratio 1:16)

Water temperature — 94 °C

Grind size — medium-coarse (similar to sea salt)

Brew time — 3:20

Step-by-Step Instructions:

Prepare the Chemex and filter

  • Rinse the paper filter with hot water to remove the paper taste and preheat the carafe.
  • Discard the rinse water and add the ground coffee.

Bloom (pre-wetting)

  • Pour 40 g of water evenly over the grounds to saturate them.
  • Let it bloom for 30–40 seconds as the coffee releases gas and expands.

Main pour

  • Slowly and gently pour the remaining water (up to 320 g) in circular motions.
  • The total brew time should be around 3:20.

Serve

  • Let the coffee rest for 1 minute after brewing, then pour into preheated cups.

Cezve (Turkish Coffee)

How to keep

In a sealed bag at room temperature, coffee can be stored for up to 12 months.

After opening the package, we recommend consuming the coffee within 2 weeks and grinding it just before brewing.
