Caturra variety, grown at 1,889 m.a.s.l. in Cajamarca, Peru, on sandy loam soil. Cherries are picked by hand and floated to remove lower-density fruit, then dry-pulped and fermented in open-air tanks for 30 to 50 hours. After fermentation, the coffee is washed two to three times and dried in solar dryers for 15 to 20 days.

The result is medium body with a creamy texture, medium-high acidity with malic, citric, and tartaric notes, and a fruity profile centred on orange. SCA score 86.75. Part of the Constellations collection — the lot is named Taygeta after a star in the Pleiades cluster.

El Guayacan is a one-hectare farm run by Uswaldo Gonzales in San Ignacio, in the highlands of northern Cajamarca. The farm takes its name from the guayacán trees that grow across the landscape — yellow-flowering hardwoods that provide natural shade and protection for the coffee plants below.
At under a hectare, this is a small family operation where every stage of production, from picking to fermentation to drying, is handled with close attention to quality.

Cajamarca, Peru

Cajamarca is a mountainous region in northern Peru, running up toward the Ecuadorian border. Coffee is grown primarily in the provinces of Jaén and San Ignacio, at elevations between 1,600 and 2,000 meters. Stable temperatures, fertile soils, and altitude-driven slow cherry development make the region one of Peru's most consistent sources of specialty Arabica.

Most farms here are small, family-run plots of one to five hectares. Caturra, Typica, and Bourbon are the main varieties, and washed processing is the local standard — suited to the clean, fruit-forward cup profile Cajamarca is known for. Shade trees are common across the hillside farms, both for the microclimate they create and for the biodiversity they support.

Brewing steps

  1. Rinse filter, add coffee
  2. Bloom with 40ml water (30–45 sec)
  3. Pour remaining water in stages (total ~3:30 min)

Keep the bag sealed at room temperature, away from direct sunlight. Unopened, it stays fresh for up to 12 months. Once opened, we recommend finishing it within 2 weeks and grinding just before brewing.
