Dossokam is a fruity coffee from the Apaneca-Ilamatepec region in El Salvador, grown at 1,200-1,300 m.a.s.l. Its natural processing highlights flavors of nectarine, yellow peach, almond, cocoa, and dark chocolate. With a medium body and a balanced profile, it offers a sweet, smooth cup experience.

El Salvador Dossokam – Chemex Recipe

Flavor Profile:

Coffee from El Salvador (especially the Dossokam variety) often features chocolate, caramel, and stone fruit notes (such as peach and prune), with gentle acidity and a clean body — Chemex brewing brings out this clarity beautifully.

Brew Ratio (for 2 cups / ~300 ml of coffee):

Coffee — 20 g

Water — 320 g (ratio 1:16)

Water temperature — 94 °C

Grind size — medium-coarse (similar to sea salt)

Brew time — 3:20

Step-by-Step Instructions:

Prepare the Chemex and filter

  • Rinse the paper filter with hot water to remove the paper taste and preheat the carafe.
  • Discard the rinse water and add the ground coffee.

Bloom (pre-wetting)

  • Pour 40 g of water evenly over the grounds to saturate them.
  • Let it bloom for 30–40 seconds as the coffee releases gas and expands.

Main pour

  • Slowly and gently pour the remaining water (up to 320 g) in circular motions.
  • The total brew time should be around 3:20.

Serve

  • Let the coffee rest for 1 minute after brewing, then pour into preheated cups.

Cezve (Turkish Coffee)

Keep the bag sealed at room temperature, away from direct sunlight. Unopened, it stays fresh for up to 12 months. Once opened, we recommend finishing it within 2 weeks and grinding just before brewing.
