Gesha variety, grown and processed at El Oasis farm in the Bella Vista village of Ortega, Tolima. After pulping, the beans undergo a 60-hour submerged fermentation in clean water tanks, with pH and temperature continuously monitored to guide the development of floral character and silky texture.

They are then thoroughly washed with fresh water to remove residual mucilage, and sun-dried on raised African beds for 10 to 14 days under controlled airflow. The cup is bright and delicate — jasmine, peach, white tea, honey, and citrus, with medium body and a clean, sweet finish.

El Oasis was founded in the Bella Vista village of Ortega, Tolima, by two chefs — Fernando Bocanegra and Pedro Lugo — whose background in flavour and craft translated directly into an obsession with coffee quality. The farm was built around a single focus: expressing the full potential of the Gesha variety.
That focus shows in every decision made at El Oasis, from the choice of genetics to the precision of fermentation control. Rather than treating processing as a routine step, Fernando and Pedro approach it as an extension of their culinary thinking — working with controlled fermentation parameters, careful drying, and stabilisation before milling to ensure that what goes into the bag reflects what they intended in the field.

Tolima, Colombia

Tolima sits at the heart of Colombia, between two Andean mountain ranges, with growing conditions that range from lush river valleys to high-altitude hillside farms. The department has a long history in coffee, and in recent years it has attracted attention from the specialty market for the quality its more elevated microclimates can produce.

Ortega, where El Oasis is located, sits in the southern part of the region at over 2,000 meters — altitude that, combined with volcanic soils and significant day-to-night temperature swings, creates ideal conditions for slow cherry ripening and the kind of complex, concentrated cup that varieties like Gesha can fully express.

Much of Tolima's high-altitude land remained relatively undisturbed for decades, leaving soils largely free of agrochemicals and well-suited to quality-focused, terroir-driven production.

18g coffee (medium grind)
270ml water (93ºC)

Brewing steps

  1. Rinse filter, discard water
  2. Add coffee, bloom with 45ml water (30–45 sec)
  3. Pour 270ml water in 4 stages (finish by 2:40)

Keep the bag sealed at room temperature, away from direct sunlight. Unopened, it stays fresh for up to 12 months. Once opened, we recommend finishing it within 2 weeks and grinding just before brewing.
