Variety: Heirloom

Region: Limmu

Altitude: 1,900 - 2,000 meters above sea level

Process: washed

Roast: filter

Q-grader's rate: 87

This washed lot comes from Bedaye Station in Gomma woreda, Limmu, one of Ethiopia’s most celebrated coffee-growing regions. Produced by Ahmed Abateman and his brother Khalid Shifa, the coffee is sourced from local heirloom Arabica varieties grown at elevations of 1,900–2,000 meters.

Bedaye works closely with surrounding smallholder farmers, providing training in sustainable agricultural practices and supporting the transition to organic methods. During harvest, ripe cherries are delivered daily to the station, where they are carefully pulped, washed, and dried on raised beds.

This particular lot was separated from Day 2 of the peak harvest, a period known for outstanding cherry ripeness and cup quality. The result is a clean and expressive Ethiopian coffee that highlights the unique character of the Limmu terroir and the meticulous work of the Bedaye team.

AeroPress Inverted Recipe

Ingredients and dosage

Coffee: 15g (slightly finer than pour-over)
Water: 220ml (92ºC)
Steep time: 1 min

Brewing steps

  1. Pour all the water in and stir immediately for about 10 seconds.
  2. Steep for 1 minute, then flip and press slowly.

💡 The inverted method means you set up the AeroPress upside-down so water doesn't drip through before it's ready. This gives a fuller, more intense flavor.

Cezve (Turkish Coffee)

Ultra-fine, powdery grind — ideal for traditional cezve/ibrik brewing. Creates a rich, intense cup with velvety texture.

Balanced fine grind calibrated at setting 6 on our EK43. Suitable for most home and professional espresso machines. Offers optimal extraction with balanced acidity, sweetness, and body.

Filter Coffee Machine

Medium grind for classic drip brewers. Provides clean, smooth flavor with moderate strength.

V60 (Pour-Over)

Medium to medium-fine grind. Calibrated for flow control and clarity — highlights delicate floral and fruity notes.

French Press

Coarse grind. Ensures easy plunging, clean body, and less bitterness.
