Pacamara variety, grown at on Finca La María in San Gil, Santander, Colombia. Handpicked at optimal ripeness. Cherries undergo 48 hours of oxidation before pulping, then are submerged in fermentation tanks for 72 hours. Slowly dried over 17 days on African beds.

La María is a 14-hectare farm in San Gil, Santander, run by Camilo Torres — a first-generation coffee grower who came to the land not through family tradition, but by choice. Camilo grew up in San Gil, studied international business and tourism, lived abroad, and returned with a different vision for the farm he purchased: what had been a livestock and large-scale agriculture operation, he set out to reforest and regenerate from the ground up. Using organic inputs, fast-growing native trees, and beekeeping to support pollination, he has turned La María into an edible forest that hosts and protects local wildlife.
The farm maintains an inventory of native flora and fauna and manages its own water sources. Camilo grows 23 coffee varieties on the farm, all under his brand The Cranky Hummingbird.

Santander, Colombia

Santander is a coffee-growing region in the northeastern Andes of Colombia, with farms typically at 1,300 to 2,000 meters above sea level. The rugged mountain terrain, cool nights, and well-defined wet and dry seasons create conditions that slow cherry development and concentrate flavour in the bean.

Coffee has been grown in Santander since the 19th century, making it one of Colombia's oldest producing areas. Most farms are small, family-run operations. The region tends to produce coffees with balanced body, restrained acidity, and flavour profiles centred on chocolate, brown sugar, and nuts — though at higher elevations, as on Finca La María, more complex and fruit-forward character emerges.

270ml water (93ºC)

Brewing steps

  1. Rinse filter, discard water
  2. Add coffee, bloom with 45ml water (30–45 sec)
  3. Pour 270ml water in 4 stages (finish by 2:40)

Since coffee is a consumable product, we don't accept returns. However, if something arrived damaged or incorrect, contact us and we'll make it right.

Keep the bag sealed at room temperature, away from direct sunlight. Unopened, it stays fresh for up to 12 months. Once opened, we recommend finishing it within 2 weeks and grinding just before brewing.
