Yellow Catuaí variety, grown in Chapada de Minas, Brazil. Selectively mechanized harvest, ripe cherries only. Processed as natural with anaerobic fermentation in sealed plastic tanks, then dried in thick layers on open-air patios.

Cup notes of caramel, milk chocolate, red fruits, and spices — with citric acidity, delicate body, and a clean aftertaste.

Cláudio Fujio Nakamura is an Agricultural Engineer who left the city and moved to Chapada de Minas in 1986 together with his wife Elvia. Today the farm is a family operation — their son Éder, an Environmental Engineer who spent several years in Japan before returning to Brazil, works alongside them.
The family has built a particular reputation for their fermented coffees, which spend 10 days in sealed barrels and have placed at the top of Brazilian coffee quality competitions. For Cláudio, coffee isn't just a crop — it's what has shaped the family's life and created livelihoods for those around them.

Chapada de Minas, Brazil

Chapada de Minas is a highland area in the state of Minas Gerais in southeastern Brazil, with coffee grown at elevations between 800 and 1,200 meters. The region has a well-defined tropical climate — warm days, cooler nights, and distinct wet and dry seasons that support consistent, quality-driven production.

Chapada de Minas is known for producing coffees with good body, low to moderate acidity, and flavour profiles centred around caramel, chocolate, and sweet fruit — characteristics that translate well into both filter and espresso applications.

Turkish coffee

In a cezve (small pot)

Coffee: 10 g (very fine grind — almost powder)
Water: 100 ml cold

Recipe

  1. Add coffee and cold water to the cezve and stir to combine.
  2. Place on the lowest heat possible and stir occasionally.
  3. As soon as the foam starts to rise, remove from heat. Do not let it boil.
  4. Let it rest for 30 seconds so the grounds settle, then pour into a cup.

💡 Turkish coffee is never filtered — the grounds stay at the bottom of the cup. Low heat and stopping before boiling are the keys to a silky foam and smooth taste.

Cezve (Turkish Coffee)

Ultra-fine, powdery grind — ideal for traditional cezve/ibrik brewing. Creates a rich, intense cup with velvety texture.


Moka Pot

Fine grind, slightly coarser than espresso. Designed for stovetop brewers to deliver a strong, bold flavor with good body.


Espresso (Universal)

Balanced fine grind calibrated at setting 6 on our EK43. Suitable for most home and professional espresso machines. Offers optimal extraction with balanced acidity, sweetness, and body.

Since coffee is a consumable product, we don't accept returns. However, if something arrived damaged or incorrect, contact us and we'll make it right.

Keep the bag sealed at room temperature, away from direct sunlight. Unopened, it stays fresh for up to 12 months. Once opened, we recommend finishing it within 2 weeks and grinding just before brewing.
