Red and Yellow Caturra varieties, grown at El Vergel Estate in Fresno, Tolima, and processed using a natural lactic fermentation method developed by Elías and Shady Bayter. After ripe cherries are harvested, they undergo a 4-hour aerobic pre-fermentation on tarps to activate their natural sugars, then are transferred to hermetic tanks in the shade for a 7-hour anaerobic fermentation.

At this stage, 10% of the bacteria Lactobacillus Plantarum is inoculated into the tanks — a step that introduces the distinctive lactic acidity and creamy complexity the lot is known for. The cherries are then mechanically dried over six days with carefully timed intervals, followed by a 30-day stabilization period in GrainPro bags. The result is a cup of dark chocolate, yogurt, strawberry, cherry, mango, peach, and creamy lactic acidity.

El Vergel Estate is a farm in Fresno, Tolima, owned by the Bayter family — Martha, Shady, and Elías — whose agricultural roots in the region go back to 1995, when they began growing avocados. After price drops and market challenges pushed them to pivot, they planted their first Caturra trees at El Vergel in 2010 and harvested their first varietals by 2015. By 2017, they were experimenting with new processing methods and finding ways to connect directly with specialty roasters.
From that work grew Forest Coffee, which launched in 2019 as a project to unlock the potential of Colombian coffee through innovation in processing, education, and sustainability. Today, Forest Coffee works with a network of 250 coffee-growing families across four major projects in Colombia, with the mission of connecting producers directly to international markets at fair, transparent prices.

Tolima, Colombia

Tolima sits in the heart of Colombia, stretching between two Andean mountain ranges with the Magdalena River valley running through its centre. It is one of the country's major coffee-producing departments, and while it has long been recognised for volume, it is increasingly known for quality — partly because much of its land remained untouched by agrochemicals during decades of limited access, leaving soils in exceptionally good condition.

Fresno, in the north of Tolima, is one of the region's traditional coffee-growing areas, with a climate and terrain that support a wide range of varieties and processing approaches.

Coffees from Tolima tend to be clean and balanced, with medium to high body, sweet acidity, and fruit-forward character — a profile that translates well into experimental processing like lactic fermentation, where the region's terroir provides a solid foundation for complex cup profiles.

Brewing steps

  1. Rinse filter, discard water
  2. Add coffee, bloom with 45ml water (30–45 sec)
  3. Pour 270ml water in 4 stages (finish by 2:40)

Since coffee is a consumable product, we don't accept returns. However, if something arrived damaged or incorrect, contact us and we'll make it right.

Keep the bag sealed at room temperature, away from direct sunlight. Unopened, it stays fresh for up to 12 months. Once opened, we recommend finishing it within 2 weeks and grinding just before brewing.
