Colombia, Caturra, and Castillo varieties, grown in Colombia's Cauca region and harvested between April and July. After machine pulping, the coffee is fermented for 6 to 8 hours, rinsed, and dried — first on a patio for 12 hours, then in a dryer for 6 hours.

The decaffeination is carried out by Descafecol, the only decaffeination plant in the Andean region of Colombia, using natural ethyl acetate derived from sugar cane and pure water from the Nevado del Ruiz volcano. This solvent-based method removes at least 97% of caffeine while preserving the coffee's natural character. The result is candy-like, with notes of tropical fruit and citrus, and a creamy body.

This coffee comes from the Central Cooperativa Indígena del Cauca, a cooperative founded in 1980 by indigenous producers from the Cauca region of Colombia. The co-op has been working with Fair Trade–certified coffees since 2006 as part of a broader effort to address income inequality in the area, and supports its members with alternating crops, housing planning, and access to alternative energy sources. Membership spans 2,373 producers from the communities of Toribio, Caldono, Santander de Quilichao, Corinto, Morales, and Tambo. The coffee is milled at the Trilladora Andes mill.

Cauca, Colombia

Cauca is a department in southwestern Colombia where coffee is grown at elevations between 1,500 and 2,200 meters above sea level, on the slopes of the Andes between two larger mountain ranges. Volcanic soils, cool nights, and well-defined seasons create ideal conditions for slow cherry development and high-density beans, which in turn produce the clean, fruit-forward acidity that Cauca is known for. The region has a strong presence of indigenous communities — including the Nasa and Misak peoples — who have been farming these highlands for centuries, combining traditional agricultural knowledge with modern quality standards. Coffees from Cauca tend to be bright and expressive, with citrus, tropical fruit, and berry character, and a clean, balanced finish.

Ultra-fine, powdery grind — ideal for traditional cezve/ibrik brewing. Creates a rich, intense cup with velvety texture.

Since coffee is a consumable product, we don't accept returns. However, if something arrived damaged or incorrect, contact us and we'll make it right.

Keep the bag sealed at room temperature, away from direct sunlight. Unopened, it stays fresh for up to 12 months. Once opened, we recommend finishing it within 2 weeks and grinding just before brewing.
