Barista Intro Training - 3 Day Program

Duration: 3 days x 4 hours = 12 hours

Training sessions are conducted by Head Barista Elizaveta Vagabova, a certified SCA trainer and winner of the Portugal AeroPress Championship.

Day 1: Espresso Fundamentals & Machine Setup

  • Introduction to espresso theory: dose, yield, brew time, pressure, temperature
  • Grinder calibration and grind size adjustment
  • Dialing in espresso: tasting, adjusting, repeating
  • Understanding under- and over-extraction
  • Espresso machine anatomy and proper workflow
  • Cleaning and daily maintenance: backflushing, rinsing, hygiene

Practice:
Dialing in espresso, pulling consistent shots, adjusting variables


Day 2: Milk Techniques & Basic Latte Art

  • Milk chemistry: understanding proteins and fats
  • Steaming techniques: microfoam, texturing, milk temperature control
  • Pouring basics: hand positioning and jug control
  • First latte art figures: heart, tulip, rosetta (basic level)
  • Milk workflow in a busy bar environment

Practice:
Steaming milk, creating microfoam, pouring into espresso


Day 3: Espresso Workflow & Service Readiness

  • Full bar workflow simulation: grinder + machine + milk station
  • Cleaning protocols (before, during, after service)
  • Water quality, steam power, and maintenance essentials
  • Bar setup: efficiency and cleanliness
  • Live service-style practice: speed, consistency, quality

Practice:
Combining espresso and milk work under time pressure.
Focus on quality control and barista confidence.
